Micro green Medley Salad with Heirloom Tomatoes and Pineapple-Mint Vinegar

1 1/2 ounces fresh pineapple mint, chopped

1 cup white wine vinegar

1/2 ounce each of the Bella Verdi Farms Mediterranean Mix (arugula, Swiss chard, cabbage)

1/2 ounce chopped tomatoes

Toss chopped mint with vinegar and allow to sit several hours or overnight in order to develop flavor.

Just before serving, toss greens and tomatoes with vinegar.
